Yorkshire puddings are almost identical to American popovers with crispy edges and a creamy centre.

Light and fluffy like soufflés Yorkshire pudding is made from a runny batter of eggs milk and flour that is whisked together before resting. Fat such as beef fat lard or lard is added to the hot pan before the batter. The eggs and high temperature cause the batter to puff up in the hot oven creating the characteristic crater in the centre.

Yorkshire pudding isn’t just for Christmas dinner. This recipe is easy enough for any weekend meal. Yorkshire pudding is traditionally served with gravy as a starter followed by the main course or alongside roast beef or similar meat for a dinner. Large Yorkshire puddings are filled with things like chilli or sausage and are a popular pub food. You can also eat it for dessert and top it with vanilla ice cream.
