While you may be tempted to make crispy fries at home from scratch (and no one will stop you if you do) all you really need is a regular bag of frozen fries (preferably baby fries) to get started. Truffle oil will not only impart the rich delicate flavors of the umami mushrooms to your fries it will also make them deliciously crispy. Just make sure your truffle oil is the real deal.

While it’s not recommended to cook with truffle oil due to its low smoke point which results in a loss of flavor when exposed to high heat you can toss some baked chips in a large bowl with a drizzle of truffle oil. You’ll be amazed at how much one ingredient can transform a dish.

Adding truffle oil to your frozen fries is a game-changer but why stop there? First of all you have a choice of which truffle oil to use – black or white? Black truffles are more readily available and the oil made with them delivers the same rich robust flavor they're famous for. White truffle oil on the other hand has that lighter peppery garlicky profile that makes white truffles so delicate and desirable. The general rule of thumb is that black truffle oil is primarily used with meat dishes and other strong flavors while white truffle oil is better suited to pasta and your new favorite fries. But no one says you can't experiment and see what you like.
