EaTravel – Fried Turkish Anchovies (Istavrit tava)

Although the fish can be baked or poached it is simply best when fried. This intensely flavored little fish is boiled whole coated with a little flour and arranged in a wheel shape around the frying pan.

Once the first side is cooked place a plate on top turn the pan over and slide the fish wheel back in to cook the other side. Delicious with a green salad.
