A basic muffin recipe and a quick bread recipe are usually interchangeable in terms of ingredients. When converting from one recipe to the other the main variables that require a little adjustment are the cooking time and temperature. This means that you can transform a favorite quick bread recipe into muffins that bake in a fraction of the time. Or your beloved muffin recipe can become a loaf of bread with just a few minor adjustments.

Making muffins from a quick bread like banana bread requires a few major adjustments: a higher oven temperature and a much shorter baking time.

If you take a quick look at a few muffin recipes you'll notice that most recipes bake at temperatures between 375 F and 425 F. If your quick bread recipe calls for baking at 350 F for 60 minutes bake it at 375 F for 30 minutes or even 400 F for 20 minutes. Since you don't have an exact cooking time use the toothpick test starting at 15 minutes and keep a close eye on the muffins. Once the muffins start to look golden brown on top be sure to check them with a toothpick. If they're not quite done yet re-test them every 5 minutes until the toothpick comes out clean then remove them from the oven to cool.
