3-Ingredient Thin Mints In 10 Minutes! | Ritz Cracker Thin Mint Recipe

Don’t worry because you can make your own version of these best-selling treats that feature a crunchy chocolate chip cookie base covered in mint chocolate chips using just two ingredients; and the process can take you as little as 15 minutes. Make a batch and keep it in the freezer for occasions like these when a sweet tooth strikes.

All you have to do is microwave some Andes Mints (the popular oblong chocolates with a mint center) or similar candy in 30-second bursts until melted then gently dip regular Ritz crackers into the mixture with a fork until completely coated. Give them a gentle tap to loosen any excess chocolate then place them on a parchment-lined baking sheet to firm up for about 15-30 minutes (fridge or freezer to speed up the process) and voila: a perfectly delicious Thin Mint imitation.

These copycat cookies are perfect as is but if you want to turn them into something a little more substantial go right ahead. Use them as the building block for a subtly minty s’more (substitute graham crackers) or a mini ice cream sandwich (vanilla or chocolate ice cream would work well here but if you really want to play into the Thin Mint theme go with mint chocolate chip).
