How to make Turon (caramelized banana spring roll)

Turon sometimes called banana lumpia is a popular street food in the Philippines. It is eaten as a snack or dessert and consists of sliced saba bananas rolled in brown sugar wrapped in lumpia or spring roll wrappers deep fried and then covered in hard caramel. In addition to banana it can often contain other fillings such as jackfruit mango coconut and even cheese.

Saba bananas are native to the Philippines and are shorter and fatter than your standard banana. They are square in shape and starchier making them perfect for cooking. Lumpia which are found in the Philippines and Indonesia are similar to spring rolls. Their wrappers are usually round thinner and more papery or crepe-like in texture compared to spring roll wrappers. It can be difficult to find Saba bananas and spring roll wrappers in which case you can simply substitute regular bananas and spring roll wrappers.

Turon should be eaten on the day of preparation but can also be prepared in advance and stored in the freezer for up to three months before frying.
