Types of cabbage from green to savoy cabbage

There are over 400 different types of cabbage grown worldwide ranging from round to conical; with flat or curled tight or loose leaves; and in the colours green white red and purple. Of the hundreds of varieties however only a few find their way to the American supermarket section namely the green red (or purple) Savoy and Napa cabbages.
Green cabbage resembles a head of iceberg lettuce and is the most common variety. The outer leaves range from dark to light green while the insides are light green or white. When raw the texture is somewhat rubbery and the flavor is a bit peppery but once cooked green cabbage softens and takes on a sweeter flavor. You want heads that feel heavy in the hand and have tightly bound leaves. Discard any wilted outer leaves before using.
