Greek Spicy Feta Cheese Dip (also known as Tirokafteri)

When I need quick inspiration I start by looking at menus of places I eat at or happen to pass by. Living in the predominantly Greek neighborhood of Astoria Queens I often end up with one of the many delicious Mediterranean sauces that always seem to pair perfectly with warm fresh pita. That’s how I came up with tyrokafteri sauce this week a dip made with hot peppers and feta.

I started the sauce by roasting hot cherry peppers which have a really nice heat that is hot but not overpowering. Once they were cooled I peeled the stems and seeds and put them in the food processor with the feta Greek yogurt olive oil and lemon juice until I had a smooth light red sauce.
