I don’t eat potato salad for lunch. That would be… unhealthy irresponsible gluttonous and nutritionally unbalanced. However I’ve discovered that when potato salad sits in the fridge it has a way of becoming lunch usually from a bite that turns into a forkful which eventually leads to succumbing to the fact that potato salad occasionally makes a great carb-bomb of a hot lunch.

Easy Tzatziki Potato Salad Recipe | Kathy's Vegan Kitchen

Luckily there are entries in the potato salad archives for just such moments. Three years ago I made a pesto potato salad with green beans so you know that adding green beans to potatoes makes for a well-balanced lunch. Last year I made a spring salad with new potatoes—see how hard I struggled with that? It’s mostly a salad with early greens like asparagus radishes and snap peas but it also has a few potatoes and a sharp Dijon vinaigrette. And today I made a tzatziki potato salad with a pound of grated cold cucumber lemon and garlic yogurt and oh it has some potatoes in it too. It's about as lunchy as potatoes can be and since I was able to make it in the far-too-small window between dropping off groceries at preschool and the I'm-huuuungry-mom meltdown after preschool I think this will be my go-to potato salad this summer should the rain ever stop long enough for me to put some lamb on the grill.

This is also a friend to the mayo-phobes you know who you are. I have to admit that I am fascinated by the level of disgust that many people feel towards mayonnaise. “It’s a classic French sauce!” I try to tell people. “It’s a simple emulsion of egg yolk and oil!” but no one listens to me. “Just try making it from scratch and see if it’s still as awful!” Alas I don’t even have to get up on my soapbox today because it turns out that yogurt (and a little sour cream) makes a phenomenal non-controversial dressing from things you probably already have in your fridge and I imagine it will be as welcome at your weekend barbecues as you are.
