I found instructions online for cooking and freezing pumpkins after Halloween one year. I collected several pumpkins that were not carved and cooked and froze a bunch of them hence the need for pumpkin recipes. I made this recipe myself when I was feeling creative one night. I'm surprised I don't see more recipes with French vanilla coffee flavoring; it adds a nice touch.
