Kitchari (also known as khichuri khichri or khichdi) is a dish with ancient roots in India. As early as 300 BCE an Indian philosopher and statesman named Chanukya wrote about a balanced meal made of rice lentils salt and ghee or oil. And as early as the 14th and 16th centuries additional documents describe a similar dish (source).
