My childhood motto was: Bring on the cream sauce. It’s no surprise that fettuccine Alfredo was one of my favorite dishes. And I’m not talking about the original more fancy version that was prepared tableside by a waiter tossing pasta with lots of butter and cheese. I mean the heartier Olive Garden-style version with butter cheese and cream. But as an adult that kind of dish doesn’t appeal to me anymore because one bite is usually enough to satisfy a craving and any more bites give me a stomach ache.
While writing a book about cauliflower I discovered how much I loved using cauliflower puree as a dairy substitute. That got me wondering: Could cauliflower make a convincing vegan fettuccine Alfredo?
