We just celebrated our fourth wedding anniversary and it reminded me of our early days of marriage when we lived in Portland in the late spring and early summer. I would make breakfast for us almost every morning—just like I do now—and we would sit and talk with the windows open before we started the day’s chores. I quickly discovered that John is not a pancake guy. The thing is I’m a pancake girl. But what we do have in common? French toast. Thank goodness.

Easy Vegan French Toast (10 Minutes!) | Minimalist Baker Recipes

Since I went dairy free I don’t make French toast as often as I used to but I do miss it. Our favorite recipe is basic with a little cinnamon and vanilla topped with fresh strawberries and maple syrup or honey.

I’m not completely egg-free (although I’m becoming more and more suspicious) but I wanted to make a vegan French toast recipe. A) to see if it’s actually possible to make French toast without eggs and B) to come up with my own variation that I can share with you. I know there are already quite a few vegan French toast recipes out there.

At first I considered “thickening” the batter with some kind of starch (i.e. flour) but then I really just wanted to keep it healthy and natural. So I went with chia seeds. I ground them to make them less visible in the final product (for those of you eaters who inspect every bite and ask “What’s in this?” before you start). But this is definitely not a necessary step.
