As you may have guessed I’ve recreated this childhood classic using real whole food ingredients making them vegan and gluten free! Let’s do this!
This 9 ingredient recipe starts with a mix of organic cane sugar (or coconut blossom sugar) coconut oil and a good dash of vanilla. I relied on aquafaba as an egg replacement which is colourless helps bind and also contributes to a little rise during baking.
For the flours I used a mix of almond flour guten-free flour mix and cornstarch (or arrowroot starch). This keeps the cookies airy and provides a light crunch.
