The Best Vegan Mashed Potatoes | Minimalist Bakery Recipes
Tyler Florence made a version of mashed potatoes that I had never seen before. He cooked the potatoes in whole milk and cream to make the creamiest most luxurious mashed potatoes I have ever seen. Obviously I can’t tolerate dairy because I hate it. So I wanted to try a vegan version to see if it would work without the cream.
Turns out that cooking potatoes in unsweetened almond milk actually just makes them floury and taste like almond milk. Yuck. Back to the drawing board. NOW YOU KNOW.
A few more attempts at the best damn vegan mashers yielded a huge success. It turns out you don’t need to cook them in anything other than plain old water. It’s the types of potatoes and mix-ins that make all the difference.
