The recipe I was planning to make for this post was stuffed French toast. But sometimes you don't feel like French toast. You want a firm grainy not too sweet waffle.

The BEST & Easiest Vegan 100% Whole Wheat Belgian Waffles
So that's what I did. The result? Chewy whole wheat vegan waffles that just happen to pair perfectly with roasted stone fruit. Oooh yeah.
The batter is simple and can be adapted to what you have. For sweetener I went the natural route: sucanat – natural cane sugar – and molasses.
I loved that the sucanat had a caramel flavor and that it was healthier than regular table sugar when it comes to blood sugar spikes. And the molasses made me scream for fall to come right away. Molasses and fall go together like Bonnie and Clyde. I checked.
