This is my vegetarian version of zuppa toscana. I used to enjoy this soup at a popular Italian restaurant but since I became a vegetarian I miss eating it. Use almond or soy milk instead of semi-skimmed milk to make it vegan.

1 (32 fluid ounce) container vegetable stock
