Cachapas: How to Make Venezuelan Fresh Corn Pancakes

Visually they resemble a thick omelette filled with cheese. The main ingredient is tender yellow corn which is mixed with eggs milk wheat flour and a touch of sugar to create a flexible mixture that enhances the taste and texture.

Cachapas can be filled with a variety of fillings the most popular being "queso de mano". This fresh creamy cheese is produced in the cattle-raising areas of Venezuela. Other fillings include pieces of ham roasted pork (pernil) cheddar cheese or shredded beef.

The easiest option is to use frozen sweet corn; the results are practically the same. However if you use frozen sweet corn you will need to omit the sugar recommended in the recipe.
