In Vietnam vermicelli noodle bowls are an easy lunch and dinner whether they’re sold by street vendors or made at home. One of the most popular options is fresh vermicelli noodles served with crispy imperial rolls along with fresh lettuce a mix of herbs and bright pickled vegetables. In the hot humid weather of Vietnam it’s a meal that’s both incredibly satisfying and refreshingly bright.

The dish is based on Vietnamese vermicelli noodles long thin noodles made from rice. Rice noodles or bún were brought to Vietnam by the Chinese during their rule from 179–938 BCE. Eventually the noodles were incorporated into Vietnamese cooking becoming a staple in dishes such as phở bánh canh and neted rice noodles.
