Warm Salmon and Potato Salad with Creamy Dill Dressing | Better Than Takeout | Food Network

I don’t know who first put dill mustard and salmon together but they were clearly a culinary genius. Or at least a very clever cook. It’s a common combination and for good reason: the bold grassy sweet flavor of the dill and the tangy mustard are an excellent counterbalance to the fatty salmon for a very balanced effect.

In this recipe I put my impeccable salmon cooking skills to use to cook two firm salmon fillets—the result is juicy tender fillets with crispy skin. While the salmon rests I wipe out the pan and add the couscous base. Once the salmon is cooked through and off the heat I stir the spinach dill and salmon flakes into the pasty pearls which helps to fluff up the couscous while the spinach wilts and the salmon reheats (and satisfies my need for efficiency—this is also when I start giving myself imaginary high fives).
