Glass noodles (cellophane noodles) are long gelatinous noodles used in dishes ranging from soups to stir fries and hot pots in China and Southeast Asia. Although most people refer to this ingredient as glass noodles most versions of this food are not transparent. It is usually an opaque white or brown thread thin and long that gets most of its flavor from the food around it. Easy to use and cook glass noodles are a type of starch that everyone can get behind especially since they are gluten-free.
While some glass noodles may appear quite clear most noodles under this name have a cloudy opaque appearance and can be snowy white light gray or subtle shades of brown. It all depends on the starch used whether it is mung beans potatoes sweet potatoes or tapioca.
