It involves grading eggs into one of three grades: Grade AA Grade A and Grade B. Each grade is determined by assessing the internal quality of the egg and the external quality of the eggshell. Eggs of the same grade may be different sizes (from Jumbo to Peewee) or colors (brown or white).
