Eggs have become a surprisingly controversial food over the years. While they may seem like an innocuous and affordable source of protein there’s a lot of misinformation surrounding their nutritional value. Back in the days when low-fat diets were popular eggs were vilified. Now that fat is back in fashion (think: the keto diet ) they seem to be less polarizing. Even the American Heart Association recommends eating 1-2 eggs per day as a quality source of protein.

And don’t forget that eggs are one of the most affordable proteins in the grocery store. They can be stored in the fridge for up to five weeks so you don’t have to worry about them going bad as quickly as other proteins like meat fish or poultry. By substituting an egg for a more expensive protein source each day you can save money and reduce food waste. Eggs are also so versatile that they can be used in everything from a frittata for breakfast to shakshuka for dinner (and don’t forget baked goods!).
