A bain marie (pronounced "bane mah-REE") is a fancy way of describing a hot water bath in the culinary world. It is often used for cooking delicate dishes such as custard. The purpose of a bain marie is to create gentle heat around the food and result in an even cooking process.
A few culinary setups can more or less correctly be referred to as a bain-marie. In each case the process involves using a container of hot water to provide indirect heat steam or both to the food.
