Pavlova – it sounds fancy but it’s basically just a big meringue with cream and fruit. It’s named after a Russian ballerina Anna Pavlova and it was made for her when she was on tour in Australia and New Zealand. It has since become a national dessert in both countries and is very popular all over the world. What I don’t understand is why it’s not ‘as’ popular here in America.
Pavlovas and meringues are both made from whipped egg whites but a pavlova has a delicate crispy exterior with a soft marshmallow inside while meringues are dry and crispy on the inside.
