All-purpose flour is the most commonly used type of flour. It is a moderately strong flour with an average gluten content that is suitable for baking everything from pizza bases and crusty bread to pie crusts cakes cookies and pancakes.

To understand what all-purpose flour is we need to quickly talk about wheat flour in general. Different types of wheat naturally have a higher protein content than others and those with higher protein are called “hard.” Wheats with low protein content are called “soft.” Durum wheat which is used to make pasta is the hardest type of wheat or the type of wheat with the highest protein content. Soft white wheat is the softest.
