When you bite into a salad of soft buttery greens you’re likely to get a mouthful of the delicious Bibb lettuce. Found year-round this light and somehow richly flavored leaf is an excellent vessel for gluten-free tacos and wraps and can make a salad sing with very little effort. It’s pricier than other lettuces but once you start using it you’ll understand and appreciate why.
Named after John Bibb a Kentucky attorney who developed this variety in his Frankfort home Bibb lettuce is a tender green lettuce that almost melts in your mouth like butter. Hence the butterhead lettuce variety. Although Bibb originally called this green lettuce "limestone lettuce" in the 1860s it wasn't commercially available until a century later and it took decades for it to become popular.
