Bulgur is best known for its starring role in tabouleh a Middle Eastern citrusy grain salad with tomatoes onions and herbs. It has been around for at least 4000 years. It is believed to be the world’s first ready-made meal. Bulgur production originated in the Mediterranean but has since spread far and wide. Bulgur remains one of the easiest to cook and most versatile grains.

Bulgur comes from cracked whole wheat kernels that are preheated and dried before packaging. This makes them cook much faster than other types of whole wheat such as wheat kernels the raw version and freekeh cracked but uncooked kernels that come from young green wheat. Bulgur is generally the least expensive of the three.
