Its strong distinctive flavor works equally well in both sweet and savory dishes.

The spice we call cardamom (Elettaria/Amomum) is the tiny seed in a small pod in the Zingiberaceae family. It grows in tropical and subtropical Asia and Guatemala. There are basically two varieties: green (white cardamom is simply green cardamom that has been bleached) and black. White/green cardamom is the most commonly used. Black cardamom is less common and has a much stronger flavor with a smoky camphorous profile. Cardamom has been used for centuries as a spice in cooking and as a medicine. Whole pods can be stewed in dishes with liquid components (and are removed/not eaten although there is no harm in accidentally swallowing a pod!). The ground seeds can be used in stews and eaten. Powdered cardamom seeds are most commonly used in baked goods.

Although it is difficult to describe most chefs agree that cardamom has a very distinct strong flavor. The dominant flavor is piney and resinous with a hint of mint.
