While the rib and loin cuts of beef make for some of the best steaks they are also some of the most expensive cuts of meat. For a cheaper alternative one of the chuck steaks is a good choice. While most chuck cuts are tough and are often used in stews braised dishes slow cooking and roasts there are some chuck steaks that are great for grilling. There are several different cuts of chuck steak each with varying degrees of tenderness that determine the best cooking method.

Chuck steak is a cut of beef that is part of the chuck primal a large piece of meat from the shoulder of the cow. This part of the animal gets a lot of exercise which makes the muscles somewhat tough. However there are parts that are more tender such as the top blade which becomes very tender once the gristle is removed. There are a number of intersecting muscles that can cause the grain of chuck meat to change multiple times in a single cut. Keeping this in mind can help you select and cut these cuts to be at their best.
