What is the difference between ginger and galangal?

Galangal is ginger’s more citrusy cousin a rhizome often used in Asian Southeast Asian and Indian cuisine. It’s peppery and spicy with a tangy bite and a hint of pine. While not as easy to find as ginger galangal is an ingredient worth seeking out and can be found in dried powder form and fresh.

Although used as a spice and aromatic galangal it is a rhizome which is an underground plant stem that sends out shoots to produce new growth. It belongs to the Zingiberaceae family (also called the ginger family) and is related to the spice ginger. It resembles ginger with a thin skin and tubular lengths that branch out into nodes. Although ginger and galangal look similar and are used in similar ways galangal has its own nuances. It is used in the cuisines of many countries including Cambodia Thailand Indonesia Malaysia Vietnam Singapore and Laos.
