You may have heard the word hing or heeng used in connection with Indian food. These are Hindi names for what is known in English as asafetida. It is a spice that is an integral part of Indian cuisine giving authentic dishes the distinctive flavour that the country’s food is known for and enhancing the flavour of other spices.
Hing or heeng is the Hindi word for asafoetida (sometimes spelled asafoetida). It is also known as devil's dung and stinking gum and as the food of the gods jowani badian hengu ingu kayam and ting.
