Hominy is a food made from corn kernels that have undergone a special chemical process to make the kernel more suitable for use in cooking and eating. The kernels are soaked in an alkaline solution that removes the husk and germ of the corn causing the kernel to swell to about twice its normal size giving it the appearance of a giant corn. Hominy has become a staple of Mexican cuisine and is traditionally used in soups stews and casseroles.
