You may have seen this curious green or purple bulb at your local grocery store or farmers market and wondered what it is or how to cook it. Kohlrabi grows with a short period from seed to harvest so they are abundant in early winter although their ease of growing makes them available year-round. Kohlrabi also known as German cabbage is a cruciferous vegetable in the cabbage family. Kohlrabi is also related to other cruciferous vegetables and plants in the brassica genus such as brussels sprouts kale broccoli turnips and cauliflower often known for their distinct smell. Kohlrabi can best be described as a delicious combination of cabbage turnips and broccoli stalks.

Nearly all cabbages are the result of deliberately breeding a single plant. For example broccoli was selected to promote large bushy buds while kale was selected for large full leaves. Kohlrabi was selected to favor the stem to a large extent. It may look like a root vegetable but surprisingly its bulbous base grows above ground with giant plumes of leaves sprouting from its top.
