Cooking tripe on The F Word | The F Word with Foxy Games

Before emigrating to the United States from her native Germany Nadia lived and worked in several other countries. This experience and her fluency in several languages have given her a deep understanding of other cuisines and cultures.

Tripe comes from the stomach lining of beef. There is also tripe from pork and sheep but beef tripe is the most common type.

The cow's stomach has four chambers. Tripe can come from any of the first three chambers. Honeycomb tripe comes from the second stomach chamber. The name refers to the honeycomb pattern on the inside of the rumen. Because honeycomb tripe has the best flavor and is the most tender it is the preferred tripe for cooking. The flat smooth blanket tripe from the first stomach and the Bible or book tripe from the third stomach are less desirable.
