When it comes to grilling the perfect burger it’s best to create texture on the outside by searing or charring it. How long you cook it is the difference between a medium-rare burger and a medium-well burger but the temperature should remain consistent: somewhere between 375 and 400 degrees Fahrenheit is ideal. On a gas grill this is usually a medium-high temperature.

Obviously grill temperature is important for searing meat but why sear it at all? You want to do this because of something called the Maillard reaction which occurs when meat hits that hot grill. Without getting too sciencey the Maillard reaction changes the composition of amino acids in food giving it an explosion of flavor and deepening the color of the meat; this is why caramelized foods taste so good.

To achieve the perfect sear your grill not only needs to be between the temperatures we mentioned but it also needs to have plenty of time to preheat. Give it about 15 minutes to get the surface nice and hot before throwing your burgers on. After that cook them for just a few more minutes depending on your desired internal temperature and color. Medium-rare burgers will take about three minutes per side on the heat while well-done burgers will take 10 minutes per side.
