Kale which once starred as the bright green backdrop of salad bars and hot buffets during my millennial youth has enjoyed a bit of a resurgence in recent years; and for good reason. Whether you opt for Tuscan dinosaur-lacinto red or Russian kale kale is packed with healthy vitamins and minerals like potassium B and C vitamins calcium and iron. Caesar salad traditionally combines creamy Caesar dressing romaine lettuce Parmesan cheese anchovies and crunchy croutons. But swapping out the romaine for kale is the kicker that will leave your friends with raised eyebrows.

First choose a kale variety that lends itself well to raw processing; Tuscan or Lacinto work best here. After pulling the leaves from the stems massage your kale with a little salt and lemon juice.
