Cacao nibs are pieces of fermented dried roasted and crushed cacao beans. That’s it! Nibs that you buy in a health food store or deli are just chocolate that hasn’t been ground up and mixed with sugar. They are extremely good for you and have an intense chocolate flavor but they are not sweet at all.

“If you already like chocolate chances are you like nibs too.”

Personally I love cacao nibs. The texture is unique: crunchy yet soft like a macadamia nut with the mouth-cooling properties of the magical substance cocoa butter; and complex with a bitter cocoa flavor. It takes a little getting used to and there is definitely a wide range of qualities to nibs (as with everything). If you are already a chocolate lover chances are you will love nibs too.
