Of course there are times when the sweetness of frozen strawberries works for a particular recipe or the convenience of canned strawberries is needed. Both can be substituted for fresh berries though they also have their own specific uses in certain applications. Fresh strawberries are generally considered to have the brightest flavor and best texture though they can be hit or miss depending on your location the time of year and even their growing conditions. But when exactly should you use each type of strawberry from canned to frozen to fresh and what makes them better for certain recipes?

Canned strawberries easily win the convenience stakes. They’re shelf stable and can be stored for up to a year if canned at home but be sure to check the expiration date when buying canned strawberries. If you have access to fresh strawberries in the summer stock up and preserve them for the colder months by canning them. This is a great way to take advantage of a large crop of strawberries that you might not be able to eat before they go bad. (You can also freeze your surplus fresh strawberries but we’ll get to that in a minute.)

When making pie or cheesecake canned strawberries are the perfect choice. They have a softer texture than fresh strawberries and often have a sweeter flavor that pairs well with desserts. A quick word of caution though: canned strawberries preserved strawberries and strawberry pie filling look similar and are usually found in the same aisle at the grocery store—just pay close attention to the labels on the cans so you get exactly what you need.
