This recipe is by far the best recipe for white chocolate chip cupcakes I have ever made. It has enough white chocolate to be noticeable without being overpowering. I topped mine with a raspberry cream cheese frosting.

Light soft easy and delicious chocolate muffins with white chocolate chips
2 large eggs at room temperature
1 cup white chocolate chips
1 teaspoon vanilla extract
