Whether it’s a classic Big Mac or a hearty Quarter Pounder the one ingredient that these McDonald’s burgers can’t do without is the ground beef patty. Some of you fast food fans may have wondered how McDonald’s patties came to be while you were devouring that burger. Well there are no dedicated burger shapers squeezing fresh patties out of a bucket of ground beef working behind the counter at every McDonald’s. In order to streamline the operation McDonald’s sources all of its ingredients — from the ground beef patties in its burgers to the coffee it brews — from outside suppliers.

These suppliers handle everything from sourcing the beef from local farms to forming and flash-freezing the patties for shipping (there are videos documenting the fascinating process). Then these packaged burgers are shipped to McDonald’s locations across the country to fill your Big Macs and Double Cheeseburgers. The one notable exception is the Quarter Pounder: The patties for this particular burger are made on-site when you order in most U.S. states. However that beef still comes from a supplier. Fortunately McDonald’s is pretty open about its suppliers. According to its website all of the beef burgers it uses in the U.S. come from a company called Lopez Foods.

According to McDonald's Lopez Foods has been the company's primary supplier of beef for more than three decades. The Oklahoma City-based company describes itself on its website as a "protein processing" specialist. That's just another way of saying that it processes all sorts of meat products. In addition to supplying McDonald's with "fresh and frozen ground beef" it also supplies pork and poultry products but not for McDonald's — the fast-food giant's pork and poultry are processed by different companies.

All of the beef supplied is USDA inspected and the company undergoes regular third-party audits from organizations like the US Roundtable for Sustainable Beef. So if you’re concerned about animal welfare it looks like McDonald’s and their suppliers aren’t cutting corners. Lopez Foods (or Lopez-Dorada Foods to use its full name) is also part of the Global Food Safety Initiative so the beef is inspected to make sure it’s fit for consumption before it becomes a delicious McDonald’s burger.
