My first attempts at making mustard were always thwarted by a bitterness that was hard to remove. Since then I’ve learned how to find the balance and time to make great mustard that’s often so easy to make and so much better tasting than bottled mustard that I’ve been making my own more and more often. This whole grain Dijon mustard is a great example.

It starts with a 50/50 combination of yellow and brown mustard seeds—yellow being milder while brown lends a sharper flavor—that are soaked in a mixture of dry white wine (a defining characteristic of Dijon mustard) and vinegar. As the seeds swell in the liquid their sharpness begins to dissipate helping to ensure a milder mustard flavor as opposed to the intense heat that results from simply mixing mustard powder with water.
