Cooking spray is practically magical. Spray it on your griddle or grilled cheese pan and the finished food just slides right off without sticking. But the air fryer is a different story. Just as sprays can damage nonstick pans experts warn they can also damage the popular appliance.

“Cooking sprays like Pam often contain soy lecithin as an emulsifier in the formula” says Martin Bucknavage a food safety expert in the Penn State Department of Food Science. “It’s less stable than high-smoke-point oils and will deteriorate at the temperatures used for air frying. This can clog your equipment especially the pan or basket and potentially ruin the surface.” So if your cooking spray contains soy lecithin don’t use it in your air fryer.
