Broth-free ramen gained popularity in part because one of New York City's top-rated restaurants Shigetoshi "Jack" Nakamura's Niche served variations on mazemen or "mixed noodles."
I have to admit that I am personally not the biggest fan of mazemen. If I were forced to choose between Nakamura's mazemen offering and a bowl of one of the options on the menu at his other restaurant Nakamura I would choose a bowl of noodles swimming in a beautiful broth without hesitation.
