I hope you all have a great weekend! We had a pretty relaxing weekend: we went to the farmers market Jack played video games and I did some baking. I’m excited to share this delicious pound cake recipe with you because I think it’s the perfect Sunday afternoon treat. It’s slightly sweet and nicely spiced. The yogurt tangies it up and gives it a nice puffy appearance. It’s moist with that perfect cakey crumb you want in a quick bread.

To be honest I’m stretching the term “pound cake” a bit here. It’s traditionally made with a pound of flour sugar eggs and butter and this one definitely isn’t. I substitute olive oil for the butter go easy on the sugar and use a mixture of almond meal and all-purpose flour to get that signature moist dense pound cake texture. These days you see a lot of pound cake recipes calling for sour cream or cream cheese but I use yogurt here. It adds the same delicious tangy flavor as sour cream or cream cheese but it’s healthier and it’s what I always have on hand.

I finish this easy cake recipe with a pinch of warming spices – nutmeg cardamom and cinnamon – lemon zest and vanilla extract to give it a fresh spicy flavour.
