Roasted vegetables are a delicious effortless side dish that goes with everything. You can roast fresh or frozen veggies and their texture is definitely better than steaming or microwaving them. Of course it’s all about the seasoning when it comes to getting the most flavor — but texture is also important. The best roasted vegetables are crispy on the outside (you don’t want a mushy outside) but still soft on the inside — which is where your cooling rack comes in handy.

When you place vegetables on a baking sheet the tops and sides will get nice and crispy from the heat but the bottoms of the vegetables will stay soft because of the lack of exposure to the heat and no way for moisture to escape. The next time you roast some potatoes or asparagus in the oven try placing them on a cooling rack on the baking sheet which will help with airflow and moisture.

Vegetables contain a lot of water. When they are cooked that moisture seeps out but when vegetables are roasted on a baking sheet the moisture underneath has nowhere to go. By placing the vegetables on a cooling rack on top of the sheet the moisture can drip off the vegetables and onto the sheet below. The rack helps to draw out the moisture and ensures that the vegetables get nice and crispy on the outside.

In addition to helping with moisture the cooling rack also helps with airflow. On a baking sheet the bottom of the vegetables isn’t exposed to the same heat as the other sides meaning they don’t get a 360-degree crisp. The cooling rack creates a separation between the vegetables and the sheet allowing that air to flow underneath and crisp them evenly on all sides — similar to how an air fryer cooks. To avoid a mess you can also place some aluminum foil on top of the baking sheet. This way any moisture that leaks out will sit on the foil before being removed and discarded so you’re not stuck scrubbing the sheet when you’re done.
