Mix equal parts gin sweet vermouth and Campari and you have a drink that is the definition of timeless popularity: the classic negroni. Over the years bartenders and mixologists have gotten creative creating countless variations on the drink to squeeze new flavors out of this three-ingredient Italian sipper. Here’s a new idea worth trying courtesy of Jordan Michelman and Zachary Carlsen in their book “But First Coffee”: a negroni with coffee ice cubes.

The bitterness of coffee naturally pairs well with Campari and the two meld together beautifully after a few stirs. However to truly capture the flavors that make a Negroni special you need to mix the cocktail so that there is only a small amount of coffee in the drink. Too much coffee at once and you would lose much of the great flavors that Negroni is known for. Adding frozen coffee ice cubes to your cocktail is like putting a brake on the infusion process. As the cubes melt the coffee will gradually infuse the drink with its deep rich essence as you drink without overwhelming your taste buds right away.

A good cup of coffee has the same complex bittersweet flavor profile as the Campari bitters at the heart of any negroni. Campari has long been the go-to ingredient for giving iced coffee a boozy upgrade and it will do the same for a negroni. But coffee brings more to the drink than just its signature boldness. With its deeply roasted richness it can help the spicy fruity flavors in the vermouth pop resulting in a more rounded drink. The sharp edge of the alcohol is toned down somewhat making it a nice sipper for light drinkers.
