How to make Yuca Fries and Sudada
1 pound yucca root peeled and cut into fries
1 lime cut into wedges (optional)
Heat the oil in a large heavy skillet over medium-high heat. Add the yuca fries to the hot oil and cook until golden brown about 20 minutes turning occasionally to brown evenly. Remove from the pan with a slotted spoon or spatula and season with salt. Squeeze lime juice over them if desired and serve immediately.
